Iphone question about resetting/ cheating boyriend?

If an iphone freezes and its reset is it possible the internet history can be erased? I was told by my boyfriend that his phone froze so he had to reset it and it erased all his history yet his call history and messages were still there. He is a very untrustworthy person and im kind of worried hes hiding something again.
